Creamy and Spicy Vegan Pasta With Walnut Pesto Recipes




An easy vegan dinner - creamy and delicious healthy pasta recipe with homemade red pesto

Ingredients

PESTO
- ½ cup walnuts
-  1/3-1/2 cup (handful) basil leaves
- 1 tbsp tomato paste
- 1 garlic clove
- 1/3 cup water
- 1 tbsp olive oil
- 1 tbsp chilli
- 3 dried tomatoes

PASTA
- 200 g whole grain penne
- ½ cup hazelnut milk
- 5-10 olives – chopped
- artichoke hearts from a glass (optional)
- 2-3 florets broccoli (2-3 florets chopped)
- 2-3 cherry tomatoes


Instructions

1. Cook pasta according to label instructions.

2. In the meantime prepare pesto – first blend the walnuts in your (or someone else’s) food processor, then add the other pesto ingredients and blend until smooth.

3. Chop broccoli, olives, halve cherry tomatoes and if you want artichokes – if you don’t have any, just leave them out.

4. Remove the water from the pasta and in the pot add hazelnut milk and pesto. Mix well until pasta is well covered in that heavenly sauce, stir the whole time. Add olives, broccoli, fresh tomatoes, artichokes and turn off heat. Stir well, serve and enjoy.
