Orange and Spice Pancakes with Buttered Bourbon Syrup


  • 1 egg
  • 1 cup buttermilk
  • 2 Tablespoons unsalted butter, melted
  • 1 Tablespoon maple syrup
  • 1 Tablespoon orange juice
  • 1 cup all-purpose flour
  • 1 Tablespoon orange zest
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cloves


  1. Preheat a griddle or large skillet to medium-low heat.
  2. In a medium bowl, beat the egg slightly, then whisk in the buttermilk, melted butter, maple syrup, and orange juice. In a separate bowl, stir together the dry ingredients (flour, orange zest, cinnamon, baking powder, baking soda, salt, and cloves).
  3. Pour the wet ingredients into the dry ingredients and stir gently, just until incorporated. It’s OK if there are a few lumps.
  4. Spray the griddle or skillet with cooking spray, or grease with butter. Ladle the batter onto the hot griddle. When bubbles rise to the surface and the bottom of the pancakes are slightly browned, flip them over. Cook for another couple minutes, until the second side is browned and the pancakes are cooked through. (Note that your cooking surface will get hotter after each batch of pancakes, so you may need to turn down the heat or shorten the cooking time as you make subsequent batches.)
  5. Top with Buttered Bourbon Syrup, walnuts, and orange slices (or whatever else you like!). Serve and enjoy!
