Grilled Avocado Burger With Marinated Beans, Créme Fraîche, & Fresh Herbs


Ingredients
  • 3–4 medium avocados
  • Freshly squeezed juice of 1 lime
  • Olive oil

Marinated Beans
  • 1 1/4 cups cooked black beans
  • 2–3 smoked tomatoes (see below) (optional)
  • 1 spring onion (scallion), finely chopped
  • 1 tsp finely chopped serrano chilli
  • 1 tbsp finely chopped fresh coriander (cilantro)
  • 1 tsp finely chopped garlic
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • Zest of 1 lime

To Serve
  • 6 burger buns
  • Butter for the buns
  • 6 tbsp crème fraîche
  • Fresh parsley and coriander (cilantro)
  • Cayenne pepper

Instructions
  1.  Rinse the beans and drain them well in a colander.
  2.  Light the barbecue and make the smoked tomatoes as per below. You can of course leave the smoking out and use unsmoked tomatoes instead, but the smoky flavor adds a fantastic dimension to the bean mixture. Chop 2–3 tomatoes and mix them and the other ingredients with the marinated beans in a bowl. Stir carefully and put to one side.
  3.  Halve the avocados and remove the seeds, then carefully scoop out the avocado flesh with a spoon. Cut slices that are as big as possible – about 1/2 in. thick, depending on the size of the avocado. Put the slices on a plate and brush them first with lime juice and then with oil.
  4. Grill the avocado slices quickly on the barbecue over a really high heat or burn off the surface with a blowtorch. The surface of the avocado should be caramelised, nearly burnt, while the inside should be cold and retain its consistency.
  5.  Butter the buns on the cut surface and grill (broil) them quickly on the barbecue.
  6. Slap a generous dollop of marinated beans on each bun. Then add 2 slices of avocado, a splash of crème fraîche, a little parsley and coriander. Finish off by sprinkling over a little cayenne pepper.
